One of the start points in the Ikaro restaurant's gastronomy is Ecuadorean cookery, and that includes the Amazon.
Carolina Sánchez brings the culture of the Amazon to the heart of La Rioja, with the essential role of women, where many of the products are worked exclusively by them.
Ikaro works to showcase this produce, and come up with recipes to reflect Ecuador's Amazon culture.
